Awe, Shucks!

Well, it seems like when it rains, it pours!  But thankfully I've got an Apple Dumplin' with me this week!

My niece, Andrea...can you tell she's thrilled???  She loaded at least 4 carts full of fall out from the storm and there are still more to go.  I had to hunt for an elusive smile from her...

Got it!  Found one in the peach tree!

I picked enough peaches earlier in the week to make a cobbler.  We went back out to the tree last night and got a bit more.  The tree is fairly old and the skins are blemished, but the peaches are good!


So I am doing my best to learn her up and corrupt her this week too...I love to corrupt the Apple Dumplin's!  Mothers everwhere, Beware!

We picked corn and enter -Awe, Shucks!  I managed to get one batch of Freezer Corn put up last night, but I will be busy with the rest of it today...

And the Peas...I hope I can find time to put the Peas up -to my mouth, that is!  Whew!!  That one-sided row is kickin' my Dunce's BUTT!  :)  I dressed it up a little for ya even!


Freezer Corn Recipe

24 C Fresh Corn Cut from the Cob
1/2 C Sugar
2 T Salt

Let stand for 30 Minutes.  Stir every 10 minutes.  Bag and Freeze.

Calling all Canners:  I admit, I love store bought Creamed Corn!  If any one has a recipe they would like to share, I would LOVE to try it out!!  Thank You!!

  1. I am jealous of the peaches. We have a saying around here that a peach tree is just a myth. They don't like our area. Isn't it great to have all that great food right outside of your door. The heat and all the work takes a lot out of you but fresh corn on the cob makes you forget all about it.

  2. I snagged that corn recipe real fast! Not that I'll be freezing any of my own this year, but I might just buy some ;-)

    My neighbor has an old peach tree, with small but delicious peaches. I'll be picking them tonight, when it cools off a bit.

  3. Jane -Our peach trees are very snooty...one year we get them the other, it snubs us! Hoping all the new bee hives will fix that! And yes, it really is a great feeling to be so lucky to have those types of things handy!

    Granny -We've been using that recipe for many years! It's so darn simple and sooo good! I can't recall the last time I bought a can of corn at the store! Let me know how it works out for you!

  4. I meant to say, I thought I was the only person who liked canned creamed corn!

    I normally don't fool with freezing corn (or much of anything else), because we go to AZ for the Winter and unplug our freezer here. I could, however, be tempted to leave it plugged in if I used your recipe....or it would possibly be eaten up before we leave ;-)

    I always made my own creamed corn, from freezing or fresh eating, simply by scraping the cobs once the kernels are cut off. I think the canned stuff has water and cornstarch added. Cornstarch doesn't do real well in home canning and freezing though.

  5. Man, do you have a lot of goodies there! I am jealous of your peaches. We can't grow them here either. We are just happy to have apples. :) and that corn recipe...TOTALLY sounds awesome and what we are gonna use this year!

  6. We ate some of the first corn on Sunday evening - just out of the garden and it was delicious. Your peach pie fill looks great, it will be so nice to have that on hand in the wintertime - a taste of summer.
